Homemade Mochi
Ingredients
The mochi

short grain Japonica glutinous rice (sweet rice/Mochigome)
For handling

Mochi-toriko (potato starch or cornstarch)
Instructions
- Soak the rice overnight in plenty of water.
- Drain the soaking water and prepare a bamboo steamer lined with a wet kitchen cloth.
- Steam the rice for 30-45 minutes over boiling water.
- Transfer the steamed rice to a bread machine and knead for 20 minutes.
- Remove the mochi dough onto a tray dusted with mochi-toriko and shape into small balls or slices.
- Serve with red bean paste, sweet soy bean powder, or grated daikon and soy sauce.
