Homemade Mochi

Ingredients

The mochi

  • 1.5 cups short grain Japonica glutinous rice (sweet rice/Mochigome)

For handling

  • ½ cup Mochi-toriko (potato starch or cornstarch)

Instructions

  1. Soak the rice overnight in plenty of water.
  2. Drain the soaking water and prepare a bamboo steamer lined with a wet kitchen cloth.
  3. Steam the rice for 30-45 minutes over boiling water.
  4. Transfer the steamed rice to a bread machine and knead for 20 minutes.
  5. Remove the mochi dough onto a tray dusted with mochi-toriko and shape into small balls or slices.
  6. Serve with red bean paste, sweet soy bean powder, or grated daikon and soy sauce.
