Ingredients

The pasta

  • 8 ounces protein pasta

The vegetables

  • 8 ounces cremini mushrooms
  • 5 cups spinach
  • 4 cloves garlic

The sauce

  • 3 tablespoons unsalted butter
  • 2 tablespoons sherry cooking wine
  • ¼ teaspoon kosher salt
  • 1 teaspoon Aleppo pepper flakes
  • freshly ground to taste black pepper
  • finely grated to taste asiago cheese

The reserved pasta water

  • ¼ to ½ cup reserved pasta water

Instructions

  1. Clean and slice the mushrooms.
  2. Cook the pasta in salted boiling water until al dente, reserving at least ½ cup of pasta water.
  3. Heat a skillet over medium heat and add 2 tablespoons of butter, then add the mushrooms and sauté until golden.
  4. Add garlic, spinach, Aleppo pepper flakes, salt, and black pepper, and sauté until the spinach wilts.
  5. Stir in the cooked pasta, ¼ cup of reserved pasta water, sherry cooking wine, and remaining butter.
  6. Serve garnished with grated asiago cheese and additional black pepper.
