Ingredients

The salad

  • 2 pieces chicken breasts, skinless and boneless
  • ½ teaspoon salt
  • 1 tablespoon jerk seasoning
  • ½ cup fresh pineapple, diced
  • 1 ripe mango, diced
  • ½ piece red onion, thinly sliced
  • 1 piece red bell pepper, thinly sliced
  • ½ cup cherry tomatoes, halved
  • ½ piece cucumber, peeled and diced
  • ¼ cup cilantro, chopped
  • 4 cups mixed salad greens, washed and patted dry
  • 1 piece avocado, sliced

Lime Vinaigrette

  • ⅓-½ cup extra virgin olive oil
  • 1 piece lime, zested and juiced
  • 1-2 tablespoons honey (liquid)
  • 1 teaspoon garlic, minced
  • ¼-½ teaspoon salt
  • ¼-½ teaspoon cracked black pepper

Instructions

  1. Season the chicken breasts with salt and jerk seasoning, then marinate for 1-2 hours.
  2. Preheat the grill on medium-high heat and spray it with cooking spray.
  3. Grill the chicken for 5-7 minutes on each side until cooked through.
  4. Prepare the fruits and vegetables by dicing and slicing them, then toss them in a bowl.
  5. In a separate bowl, whisk together the vinaigrette ingredients until combined.
  6. Assemble the salad by placing mixed greens on a plate, topping with the fruit and veggie mixture, sliced avocado, and grilled chicken.
  7. Drizzle the vinaigrette over the salad, garnish with cilantro, and serve.
