Ingredients

The fritters

  • 2 cups chickpeas
  • 1 heaping cup fresh spinach
  • ½ cup diced yellow onion
  • 3 cloves garlic
  • 3 tablespoons lime juice
  • 2 tablespoons chopped cilantro
  • 1 tablespoon tahini
  • 2 teaspoons curry powder
  • ½ teaspoon salt
  • ¼ cup all-purpose flour

The binding mixture

  • 1 tablespoon ground flax seed
  • 3 tablespoons water

Instructions

  1. Preheat the oven to 350°F.
  2. Whisk together the ground flax and water in a small bowl and let it rest for 5 minutes.
  3. In a food processor, combine chickpeas, spinach, yellow onion, garlic, lime juice, cilantro, tahini, curry powder, and salt, and pulse until mostly broken down.
  4. Add the flax egg and all-purpose flour to the mixture and pulse until just combined.
  5. Form the mixture into 12 small fritters and flatten them slightly.
  6. Place the fritters on a parchment-lined baking sheet.
  7. Bake for 20-22 minutes, flipping halfway through, until golden brown.
