Instructions
- Preheat the oven to 350°F.
- Whisk together the ground flax and water in a small bowl and let it rest for 5 minutes.
- In a food processor, combine chickpeas, spinach, yellow onion, garlic, lime juice, cilantro, tahini, curry powder, and salt, and pulse until mostly broken down.
- Add the flax egg and all-purpose flour to the mixture and pulse until just combined.
- Form the mixture into 12 small fritters and flatten them slightly.
- Place the fritters on a parchment-lined baking sheet.
- Bake for 20-22 minutes, flipping halfway through, until golden brown.
