Red Chile Rice

Ingredients

  • ¾ cup tomato puree
  • ¼ medium yellow onion
  • 2 cloves garlic
  • 1 canned chipotle chile
  • ½ teaspoon cumin
  • pinch cloves (optional)
  • 1-1½ teaspoons freshly squeezed lime juice
  • 1 tablespoon vegetable oil
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • to taste Kosher salt

Instructions

  1. Blend the tomato puree, onion, garlic, cumin, cloves, and chipotle chile until smooth.
  2. In a skillet, heat the oil over medium heat and sauté the rice for 30 seconds.
  3. Add the blended tomato mixture and cook for another minute.
  4. Pour in the chicken broth, bring to a boil, cover tightly, and reduce heat to low.
  5. Cook for 20-30 minutes until the rice is tender.
  6. Remove from heat and let it stand covered for 10 minutes before serving.
