Instructions
- Beat the eggs in a bowl with salt, sesame oil, Shaoxing wine, and ground white pepper until well combined.
- Heat 2 tablespoons of cooking oil in a wok, add the egg mixture, and stir until the eggs form lumps and are fully cooked. Remove and set aside.
- Clean the wok, heat 1 tablespoon of cooking oil, add tomato wedges, sugar, and water. Cover and cook for about 30 seconds, then add the eggs back in and stir-fry for another 30 seconds before serving.
