Ingredients

The base

  • 2 large eggs

  • 1 cup warm water

Toppings (optional)

  • to taste soy sauce
  • to taste chili oil
  • to taste scallions
  • to taste sesame seeds

Instructions

  1. 1. In a bowl, whisk the eggs with salt until small bubbles form.
  2. 2. Add warm water to the egg mixture and whisk until combined.
  3. 3. Strain the mixture through a fine-mesh sieve into ramekins.
  4. 4. Cover the ramekins with plastic wrap or foil and create a steam vent.
  5. 5. Prepare a pot with a steamer rack and water below the rack, then bring to a boil.
  6. 6. Place the ramekins in the steamer, cover, and steam for 10 minutes.
  7. 7. Remove from the steamer and garnish with toppings before serving.
