Soy-Marinated Eggs

Instructions
- Prepare an ice bath in a medium bowl and set aside.
- Boil water in a large saucepan and gently lower the eggs into the boiling water. Cook for 7 minutes.
- Transfer the eggs to the ice bath for 2 minutes to cool, then peel them under running cold water.
- In a medium saucepan, combine garlic, chiles or red pepper flakes, soy sauce, mirin, rice vinegar, and water. Bring to a boil, then reduce heat and simmer for 5 minutes.
- Remove the saucepan from heat and add the peeled eggs. Let them sit at room temperature for at least 1 hour.
- To serve, drain the eggs, quarter them, and sprinkle with toasted sesame seeds if desired.
