Soy-Marinated Eggs

Ingredients

The eggs

  • 6 large eggs

The marinade

  • 5 cloves garlic, peeled
  • 3 dried chiles de árbol or 1 tsp. crushed red pepper flakes
  • ¾ cup soy sauce
  • 3 Tbsp. mirin
  • 2 Tbsp. unseasoned rice vinegar
  • 2 cups water
  • to taste toasted sesame seeds (for serving; optional)

Instructions

  1. Prepare an ice bath in a medium bowl and set aside.
  2. Boil water in a large saucepan and gently lower the eggs into the boiling water. Cook for 7 minutes.
  3. Transfer the eggs to the ice bath for 2 minutes to cool, then peel them under running cold water.
  4. In a medium saucepan, combine garlic, chiles or red pepper flakes, soy sauce, mirin, rice vinegar, and water. Bring to a boil, then reduce heat and simmer for 5 minutes.
  5. Remove the saucepan from heat and add the peeled eggs. Let them sit at room temperature for at least 1 hour.
  6. To serve, drain the eggs, quarter them, and sprinkle with toasted sesame seeds if desired.
