Ingredients

The eggs

  • 6 large eggs

The marinade

  • 6 cups water
  • 2 tablespoons soy sauce or tamari
  • 2 teaspoons fresh grated ginger
  • 2 teaspoons fresh grated lemongrass
  • 2 teaspoons garlic chili sauce
  • 1 teaspoon fish sauce
  • 2 bags black tea
  • 2 bags ginger tea

Instructions

  1. Prepare the marinade by boiling 4 cups of water and mixing in soy sauce, ginger, lemongrass, and fish sauce.
  2. Add the tea bags to the mixture and let it steep until cool.
  3. In another pot, boil 5 cups of water and carefully add the eggs.
  4. Boil the eggs for 5 minutes, then transfer them to an ice bath for 5 minutes.
  5. Peel the eggs and place them in the cooled marinade.
  6. Let the eggs soak in the marinade for at least 30 minutes or refrigerate overnight for more flavor.
