Ramen Egg

Ingredients

The eggs

  • 4 pieces eggs (room temperature)

The marinade

  • 2 tablespoons soy sauce
  • 2 tablespoons sugar
  • 1 tablespoon miso
  • 1 tablespoon mirin
  • 2 teaspoons honey
  • ΒΌ teaspoon Tobanjyan (Chinese broad bean chili paste)
  • 1 clove garlic (crushed)

Instructions

  1. Boil water in a large saucepan.
  2. Gently add the eggs one by one into the boiling water using a ladle.
  3. Set a timer for 7-8 minutes.
  4. After boiling, transfer the eggs to a bowl of icy cold water to stop cooking.
  5. Peel the eggs and set aside.
  6. Combine soy sauce, sugar, and other marinade ingredients in a saucepan over medium heat.
  7. Turn off the heat just before the sauce boils and add miso, dissolving it.
  8. Cool the marinade and place the eggs in a ziplock bag with the marinade.
  9. Refrigerate for at least 5 hours to marinate.
