Ingredients

Eggs and Cooking

  • 1 tablespoon baking soda
  • 6 pieces eggs, at room temperature
  • water for boiling

Seasoning Sauce

  • 50 ml Japanese tsuyu or soup base
  • 50 ml cooking sake
  • 25 ml soy sauce
  • 25 ml mirin

Instructions

  1. 1. Boil water with baking soda in a pot deep enough to cover the eggs.
  2. 2. Once boiling, add the eggs and cook for 7 minutes.
  3. 3. In a separate pan, combine all ingredients for the seasoning sauce and bring to a boil, then cool.
  4. 4. After cooking, plunge eggs into ice water for 5 minutes and peel them while submerged.
  5. 5. Place the eggs in a container with the seasoning sauce, ensuring they are coated, and refrigerate overnight or for 1 to 2 days.
  6. 6. Slice the eggs in half and serve with ramen or as a snack.
