Broccoli Soup

Instructions
- Heat olive oil in a large pot and sauté the chopped onion over medium to low heat until soft, about 15 minutes.
- Add the broccoli and sauté for an additional 5-10 minutes.
- Pour in the water (or broth) and add the salt, then cook until the broccoli is soft, about 15 minutes.
- Puree the hot soup in batches in a Vitamix until smooth and creamy.
- Reheat the soup if necessary and serve.
