Broccoli Soup

Ingredients

  • 1 tbs olive oil
  • 1 bunch scallions, chopped
  • 1 clove garlic, minced
  • 1 tbs chives, chopped
  • 1 lb medium head broccoli, chopped
  • 6 cups broth
  • 1 cup milk
  • 1 tsp salt

Instructions

  1. 1. Sauté the scallions in olive oil over medium heat until soft.
  2. 2. Add the garlic and sauté for another 30 seconds.
  3. 3. Add the chives, broccoli, and broth; bring to a boil, then simmer for 25 to 30 minutes until the broccoli is tender.
  4. 4. Use an immersion blender to puree the soup.
  5. 5. Stir in the milk and salt, and adjust seasoning if necessary.
  6. 6. Serve warm, garnished with grated cheese if desired.
