Broccoli Soup

Instructions
- 1. Sauté the scallions in olive oil over medium heat until soft.
- 2. Add the garlic and sauté for another 30 seconds.
- 3. Add the chives, broccoli, and broth; bring to a boil, then simmer for 25 to 30 minutes until the broccoli is tender.
- 4. Use an immersion blender to puree the soup.
- 5. Stir in the milk and salt, and adjust seasoning if necessary.
- 6. Serve warm, garnished with grated cheese if desired.
