Sardine Tagine

fresh sardines, deboned and cleaned

chermoula

preserved lemon flesh

potatoes, thinly sliced

bell peppers, seeded and sliced into rings

tomatoes, sliced

zucchini, sliced

lemon slices or chopped preserved lemon for garnish

Instructions
- Chop the preserved lemon flesh and mix it with the chermoula.
- Cover the sardines with half of the chermoula and refrigerate to marinate.
- Preheat the oven to 200°C (390°F).
- Layer the potatoes, bell peppers, zucchini, and tomatoes in a large ovenproof dish.
- Mix the remaining chermoula with 2 tablespoons of water and spread it over the vegetables.
- Place the marinated sardines on top of the vegetables and add lemon slices.
- Cover the dish with foil and bake for 30 to 35 minutes until the potatoes are soft and the sardines are cooked.
- Serve hot with crusty bread or warm couscous, garnished with chopped coriander.
