Broiled Herb-Stuffed Sardines

Instructions
- Preheat the broiler on high and position the top rack 4 inches from the heating element.
- Gut the sardines by cutting a shallow line along the belly and removing the innards, then rinse and pat dry.
- In a food processor, combine butter or ghee, parsley, green onions, salt, and pepper, and pulse until a uniform paste forms.
- Spoon 1 tablespoon of the filling into each sardine cavity.
- Brush the skin of the sardines with melted bacon grease and sprinkle salt and pepper on top.
- Place the sardines on a wire rack over a foil-lined baking sheet and broil for 5 minutes, flipping halfway through.
- Serve with lemon slices and spritz with fresh lemon juice.
