Broiled Herb-Stuffed Sardines

Ingredients

  • 6 large fresh sardines
  • 3 tablespoons butter or ghee
  • ½ cup Italian parsley, packed
  • 4 stalks green onions, chopped medium
  • to taste Kosher salt
  • to taste Freshly ground black pepper
  • 2 tablespoons melted bacon grease
  • 1 large lemon

Instructions

  1. Preheat the broiler on high and position the top rack 4 inches from the heating element.
  2. Gut the sardines by cutting a shallow line along the belly and removing the innards, then rinse and pat dry.
  3. In a food processor, combine butter or ghee, parsley, green onions, salt, and pepper, and pulse until a uniform paste forms.
  4. Spoon 1 tablespoon of the filling into each sardine cavity.
  5. Brush the skin of the sardines with melted bacon grease and sprinkle salt and pepper on top.
  6. Place the sardines on a wire rack over a foil-lined baking sheet and broil for 5 minutes, flipping halfway through.
  7. Serve with lemon slices and spritz with fresh lemon juice.
