Ingredients

The sauce

  • 2 tablespoon mayonnaise
  • 1 tablespoon mustard
  • 1 tablespoon capers
  • 2 tablespoon parsley
  • zest of 1 lemon

The fish

  • 3 to 4 6-oz halibut fillets

Seasoning and oil

  • kosher salt and pepper
  • 2 tablespoon grapeseed or other neutral oil
  • lemon wedges for serving

Instructions

  1. Preheat the broiler and set a rack four inches from the heat source.
  2. Mix mayonnaise, mustard, capers, parsley, and lemon zest in a small bowl.
  3. Season the halibut fillets with salt and pepper, then spread the mayonnaise mixture on top.
  4. Heat oil in a large skillet over high heat until shimmering.
  5. Carefully add the fillets to the skillet and transfer it to the broiler.
  6. Cook for 4 to 5 minutes depending on the thickness of the fillets.
  7. Remove the fillets from the oven and let them rest for 1 minute before serving with lemon wedges.
