Ingredients

The steak

  • 3 pieces boneless top loin strip steaks (¾-1 inch thick, 8-10 ounces each)
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoons unsalted butter

The sauce

  • 3-4 tablespoons minced shallots
  • 1 clove garlic (minced)
  • ¼ cup spiced rum
  • ¼ cup heavy cream
  • ½ tablespoon Worcestershire sauce
  • ½ teaspoon Dijon mustard
  • 1 teaspoon tomato paste
  • 1 tablespoon fresh parsley (to garnish)

Instructions

  1. Season the steaks with salt and pepper.
  2. Melt the butter in a large skillet over medium heat.
  3. Sear the steaks for 2 minutes on one side, then flip and sear for another 1-2 minutes.
  4. Remove the steaks from the skillet and place them on a plate.
  5. Add the shallots and garlic to the skillet and sauté.
  6. Remove the skillet from the heat and add the spiced rum, sauté for 60 seconds until the alcohol burns off.
  7. Mix the heavy cream, Worcestershire sauce, mustard, and tomato paste, then add to the skillet.
  8. Stir for about a minute until heated through.
  9. Return the steaks to the skillet, turning to coat in sauce.
  10. Plate the steaks, spoon more sauce over the top, and garnish with parsley.
