Ingredients

The salad

  • 2 lbs potatoes
  • 3 large hard boiled eggs
  • 2 tbs fresh dill
  • 2 scallions chopped
  • 2 radishes chopped fine

The dressing

  • ¼ cup Greek yogurt
  • 1 tbs red wine vinegar
  • ½ tsp salt

Instructions

  1. Boil the potatoes until tender, then cool slightly and cut into ¾ inch dice.
  2. Place the diced potatoes in a large bowl and add the chopped eggs, dill, scallions, and radishes.
  3. In a small bowl, mix together the Greek yogurt, salt, and vinegar.
  4. Pour the dressing over the potato mixture and stir to coat evenly.
