Lentil Polenta Casserole

Ingredients

Base ingredients

  • 1 tablespoon olive oil
  • 1 zest lemon
  • 3 cups favorite lentil soup
  • 1 8-ounce tube polenta

Toppings

  • 1 big handful chopped kale
  • to taste scallions
  • to taste avocado
  • to taste chive flowers (optional)

Instructions

  1. Preheat the oven to 400°F and prepare a casserole dish with olive oil and lemon zest.
  2. Layer the lentil soup in the bottom of the dish.
  3. Slice the polenta and arrange it on top of the soup in overlapping circles or rows.
  4. Cover with foil and bake for 25-30 minutes.
  5. Remove the foil, brush the polenta with olive oil, and broil for 1-2 minutes until golden brown.
  6. Let it rest for 5 minutes before serving topped with kale, scallions, and avocado.
