Instructions
- Preheat the oven to 400°F and prepare a casserole dish with olive oil and lemon zest.
- Layer the lentil soup in the bottom of the dish.
- Slice the polenta and arrange it on top of the soup in overlapping circles or rows.
- Cover with foil and bake for 25-30 minutes.
- Remove the foil, brush the polenta with olive oil, and broil for 1-2 minutes until golden brown.
- Let it rest for 5 minutes before serving topped with kale, scallions, and avocado.
