Kimchi Udon With Scallions

Instructions
- Step 1: Heat 2 Tbsp. of unsalted butter in a skillet and cook chopped kimchi and gochujang until softened.
- Step 2: Add chicken broth and kimchi juice, simmering until slightly reduced.
- Step 3: Boil udon noodles according to package directions.
- Step 4: Transfer noodles to the skillet, add remaining butter, and toss until coated.
- Step 5: Season with salt, divide into bowls, and top with egg yolks, scallions, and sesame seeds.
