Ingredients

The sauce

  • 5 Tbsp. unsalted butter
  • 1 cup finely chopped kimchi
  • cup kimchi juice
  • 2 Tbsp. gochujang (Korean hot pepper paste)
  • ½ cup low-sodium chicken broth
  • Kosher salt to taste

The noodles and toppings

  • 1 lb. fresh or frozen udon noodles
  • 4 large egg yolks
  • 3 scallions, white and pale-green parts only
  • 1 Tbsp. toasted sesame seeds

Instructions

  1. Step 1: Heat 2 Tbsp. of unsalted butter in a skillet and cook chopped kimchi and gochujang until softened.
  2. Step 2: Add chicken broth and kimchi juice, simmering until slightly reduced.
  3. Step 3: Boil udon noodles according to package directions.
  4. Step 4: Transfer noodles to the skillet, add remaining butter, and toss until coated.
  5. Step 5: Season with salt, divide into bowls, and top with egg yolks, scallions, and sesame seeds.
