Ingredients

The noodles and vegetables

  • 1 pound udon noodles
  • 2 tablespoons oil
  • 4 pieces green onions
  • 3 cloves garlic
  • 1 small carrot
  • 2 cups baby bok choy

The sauce

  • 2 tablespoons soy sauce
  • 2 tablespoons mirin
  • 1 tablespoon honey
  • 2 tablespoons gochujang
  • 1 teaspoon sesame oil

Instructions

  1. Mix the sauce ingredients in a small bowl and set aside.
  2. Heat oil in a non-stick skillet or wok over medium heat, then add green onions and garlic, cooking until fragrant.
  3. Add the carrot and bok choy, cooking for 3-4 minutes.
  4. Add the cooked noodles and sauce, mixing everything together and cooking for 1-2 minutes.
  5. Remove from heat and serve, garnished with sesame seeds.
