Ingredients

The noodles and sauce

  • 1 pound rice noodles
  • 3 tablespoons soy sauce
  • 3 tablespoons dark soy sauce
  • ΒΌ cup water
  • 2 tablespoons sugar
  • 2 tablespoons sesame oil
  • 2 tablespoons vegetable oil

The aromatics and toppings

  • 6 cloves garlic, minced
  • 4 stalks green onion, sliced
  • 3 small red chilies
  • 1 cup bean sprouts
  • 2 tablespoons sesame seeds, for serving

Instructions

  1. Prepare the spicy noodle sauce by mixing sesame oil, dark soy sauce, soy sauce, water, and sugar in a small bowl.
  2. Cook the rice noodles according to package instructions, then drain and set aside.
  3. In a large skillet, heat vegetable oil over medium-high heat, then add garlic, the white part of green onion, and red chilies. Stir-fry for 2-3 minutes.
  4. Add the cooked noodles and sauce to the skillet, mixing until noodles are coated. Increase heat, add bean sprouts, and cook for 3 minutes.
  5. Add the remaining green onion and cook for an additional 2 minutes until wilted. Serve garnished with sesame seeds.
