Ingredients

The ramen

  • 2 packets ramen noodles (seasonings discarded)

The broth

  • 4 cups vegetable broth
  • 1 teaspoon sesame oil
  • 1 small red onion (thinly sliced)
  • 1 cup cherry tomatoes (halved)
  • 2 tablespoons chili sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon brown sugar

The toppings

  • to taste sesame seeds
  • to taste green onions
  • to taste soft-boiled eggs

Instructions

  1. Sauté sliced onions, garlic, and tomatoes in sesame oil until onions are translucent.
  2. Blend the sautéed mixture with vegetable broth, soy sauce, brown sugar, and rice vinegar until smooth.
  3. Bring the blended broth to a boil, then add the ramen noodles and cook until al dente.
  4. Serve the noodles topped with sesame seeds, green onions, and soft-boiled eggs.
