Spicy Ramen

Ingredients

The noodles

  • 8 ounces dry ramen noodles

The sauce

  • 2 tablespoons toasted sesame oil
  • 4 cloves garlic
  • ¼ cup soy sauce
  • ½ teaspoon ground ginger
  • 1 teaspoon chili oil
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon rice wine vinegar

The garnish

  • 4 scallions chopped (whites and greens divided)

Instructions

  1. Boil water in a medium pot and cook the ramen noodles until al dente, reserving 1 cup of cooking water before draining.
  2. In a pan, heat the sesame oil over medium heat, add the scallion whites and sauté for a minute, then add the garlic and sauté until fragrant.
  3. Combine the soy sauce, ground ginger, chili oil, sweet chili sauce, and rice wine vinegar in the pan, bringing the mixture to a boil before removing from heat.
  4. Toss the drained ramen in the sauce, adding reserved water gradually to achieve desired consistency.
  5. Serve warm, garnished with scallion greens.
