Spicy Ramen

Instructions
- Boil water in a medium pot and cook the ramen noodles until al dente, reserving 1 cup of cooking water before draining.
- In a pan, heat the sesame oil over medium heat, add the scallion whites and sauté for a minute, then add the garlic and sauté until fragrant.
- Combine the soy sauce, ground ginger, chili oil, sweet chili sauce, and rice wine vinegar in the pan, bringing the mixture to a boil before removing from heat.
- Toss the drained ramen in the sauce, adding reserved water gradually to achieve desired consistency.
- Serve warm, garnished with scallion greens.
