Ingredients

The sauce

  • 1 ¼ cups vegetable stock
  • 2 tablespoons soy sauce
  • ½ teaspoon toasted sesame oil
  • 1 teaspoon garlic powder
  • ¼ teaspoon red pepper flakes
  • 1 ½ tablespoons sweet chili sauce
  • 2 tablespoons creamy peanut butter
  • 2 scallions thinly sliced (whites and greens)

The noodles

  • 1 (3-ounce) pack instant ramen noodles
  • 1 teaspoon sesame seeds for garnish

Instructions

  1. Combine the vegetable stock, soy sauce, sesame oil, garlic powder, red pepper flakes, and sweet chili sauce in a large, microwave-safe bowl and microwave for 2 minutes.
  2. Whisk in the peanut butter and the whites of the scallions until smooth.
  3. Add the ramen to the bowl and flip it several times to coat it in the broth, then microwave for 1 minute.
  4. Flip the ramen and microwave for another minute, stirring until the noodles are separated and coated.
  5. Allow the noodles to sit in the broth for a few minutes to thicken into a sauce.
  6. Serve warm garnished with the greens of the scallions and sesame seeds.
