Ingredients

The noodles

  • 150-200 g mafalda noodles

The sauce

  • 2 pieces green onions, chopped
  • 2 tbsp chopped cilantro
  • tbsp gochujang
  • 2 cloves garlic, minced
  • ¼ cup olive oil
  • ¼ cup peanut butter
  • 2 tbsp soy sauce or tamari
  • 2 tsp sugar
  • ½ pieces lime, juice
  • to taste cilantro, green onions and chopped peanuts for garnish

Instructions

  1. Cook the noodles according to package instructions and set aside.
  2. In a heat-proof bowl, combine green onion, cilantro, gochujang, and garlic.
  3. Heat olive oil in a small frying pan or pot, then add it to the bowl and stir to combine.
  4. Whisk in peanut butter, soy sauce, sugar, and lime juice to the bowl.
  5. Add the cooked noodles to the sauce bowl and stir to coat.
  6. Serve topped with chopped green onions, cilantro, and peanuts.
