Ingredients

The vegetables

  • 2 tbsp Olive oil
  • ¾ cup Onion (sliced thinly into quarter moons)
  • cups Mushrooms (sliced)
  • cups Broccoli (cut into florets)
  • 1 cup Snow peas
  • cups Bell peppers (cut into strips)

The seasoning and sauce

  • ¼ tsp Sea salt
  • tsp Black pepper
  • 1 tbsp Unsalted butter (or more oil for dairy-free)
  • 4 cloves Garlic (minced)
  • 2 tbsp Chicken bone broth (or any broth of choice)
  • 2 tbsp Coconut aminos

Instructions

  1. Heat oil in a large wok over medium-high heat until very hot.
  2. Add mushrooms and onions, stir frying for 4-6 minutes until soft.
  3. Add broccoli, snow peas, and bell peppers, seasoning with salt and pepper, and stir fry for 5-7 minutes until crisp-tender.
  4. Create a well in the center, add butter to melt, then add minced garlic and sauté until fragrant.
  5. Add bone broth and coconut aminos, stir frying for 1-2 minutes until the sauce is glossy. Adjust seasoning if needed and serve.
