Ingredients

The lamb

  • 2 packs Seasoned Frenched Rack of Lamb from Trader Joe’s

The fat

  • 2 tablespoons lard or your fat of choice

Instructions

  1. Transfer the lamb racks to the fridge 24 hours before cooking.
  2. Set the water oven to 130°F for medium rare chops.
  3. Once ready, place the lamb into the water oven and cook for about 2 hours.
  4. Remove the lamb from the bath and dry with paper towels.
  5. Heat lard in a large cast iron skillet over high heat and sear each rack for a few minutes on each side.
  6. Slice the lamb and serve.
