lard or your fat of choice
Instructions
- Transfer the lamb racks to the fridge 24 hours before cooking.
- Set the water oven to 130°F for medium rare chops.
- Once ready, place the lamb into the water oven and cook for about 2 hours.
- Remove the lamb from the bath and dry with paper towels.
- Heat lard in a large cast iron skillet over high heat and sear each rack for a few minutes on each side.
- Slice the lamb and serve.
