Roasted Rack of Lamb

Ingredients

The lamb

  • 1 rack of lamb

The seasoning

  • 1 tsp garlic powder
  • ½ tsp sea salt
  • ½ tsp black pepper

The marinade

  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 3 tbsp olive oil, divided

For searing

  • 1 tbsp butter

Instructions

  1. Allow the rack of lamb to come to room temperature.
  2. Season the rack evenly with salt, pepper, and garlic powder.
  3. Combine rosemary, thyme, and 1 tbsp of olive oil in a small bowl and mix.
  4. Coat the lamb with the marinade on both sides.
  5. Heat an oven-safe skillet to medium heat and add 2 tbsp of olive oil and butter.
  6. Sear the rack of lamb fat side down for 5 minutes, rocking it to brown all sides.
  7. Bake the lamb at 400°F for 20 to 25 minutes, checking for desired doneness.
  8. Let the lamb rest for 5-10 minutes before serving by cutting between the bones.
