Quick & Simple Roasted Rack of Lamb

Instructions
- Preheat the oven to 425°F and prepare a foil-lined baking sheet.
- Season the lamb generously with salt and pepper, then sprinkle on the Dukka seasoning.
- Heat coconut oil in a cast iron skillet over high heat until smoking.
- Add the rack of lamb meat side down and sear for 4 minutes, then flip and cook for an additional 2 minutes.
- Transfer the rack to the baking sheet and roast in the oven for 12-15 minutes, checking for desired doneness.
- Let the lamb rest for 10 minutes before slicing into four pieces and serving.
