Ingredients

The lamb

  • 1 rack lamb (~1 pound)

The seasoning

  • 1 tablespoon Dukka seasoning
  • to taste none Kosher salt
  • to taste none Freshly ground black pepper

The cooking fat

  • 2 tablespoons coconut oil or ghee

Instructions

  1. Preheat the oven to 425°F and prepare a foil-lined baking sheet.
  2. Season the lamb generously with salt and pepper, then sprinkle on the Dukka seasoning.
  3. Heat coconut oil in a cast iron skillet over high heat until smoking.
  4. Add the rack of lamb meat side down and sear for 4 minutes, then flip and cook for an additional 2 minutes.
  5. Transfer the rack to the baking sheet and roast in the oven for 12-15 minutes, checking for desired doneness.
  6. Let the lamb rest for 10 minutes before slicing into four pieces and serving.
