Ingredients

The lamb

  • 1 rack of lamb, about a pound
  • to taste kosher salt
  • to taste fresh cracked pepper

The sauce

  • 2 T. mayonnaise
  • 2 tsp. mustard
  • to taste chopped fresh herbs (rosemary, thyme, chives, mint, tarragon)

Instructions

  1. Preheat the oven to 475ºF.
  2. Place the lamb on a parchment-lined baking sheet and season with salt and pepper.
  3. Mix together mayonnaise, mustard, and herbs, then spread over the rack of lamb.
  4. Bake in the oven for 10 minutes, then reduce the heat to 400ºF and bake for an additional 10 minutes.
  5. Remove the lamb from the oven and let it rest for at least 10 minutes before cutting and serving.
