Garlic Herb Roasted Rack of Lamb

The seasoning

fresh Italian parsley, finely chopped

fresh rosemary, finely chopped

red pepper flakes (optional)

Montreal beef seasoning (or cracked black pepper and coarse salt)
Instructions
- Rub the rack of lamb with olive oil.
- Apply minced garlic, rosemary, parsley, and red pepper flakes to the fat side of the rack, rubbing the seasonings into the meat.
- Sprinkle Montreal seasoning on top and pat it down.
- Let the seasoned rack sit at room temperature for 30-45 minutes.
- Preheat the oven to 450°F and place an oven rack in the middle.
- Roast the rack of lamb for 18-23 minutes until the internal temperature reaches 115-120°F for medium-rare.
- Remove from the oven, tent with foil, and let rest for 10 minutes.
- Slice between the bones and serve with sides.
