Ingredients

The soup base

  • 3 large Carrots, peeled and chopped
  • 4 spears Celery, chopped
  • 1 unit Onion
  • 3 cups Chicken Broth or Bone Broth
  • 3 unit Chicken Thighs, bone-in, skin-on
  • 3 tablespoons Olive Oil or Butter
  • 4 cloves Garlic, mashed
  • 4 cups Water

The spices

  • ½ teaspoon Turmeric
  • 1 tablespoon Sea Salt
  • 1 teaspoon Ground Black Pepper
  • 1 tablespoon Dried Oregano
  • 1 tablespoon Dried Dill
  • 1 teaspoon Paprika

For garnishing

  • to taste unit Parsley, chopped

The pasta

  • 1 12-ounce package Pasta of Choice

Instructions

  1. Prepare the vegetables by washing and chopping the carrots, celery, and onion.
  2. Turn the Instant Pot to the 'sauté' setting and add oil or butter.
  3. Once warmed, add onions, carrots, celery, garlic, and sea salt, cooking for about 5 minutes.
  4. Add chicken thighs, broth, water, pasta, and spices, then stir to combine.
  5. Set the Instant Pot to the 'soup' function and cook for about 8 minutes.
  6. Allow the pressure to release naturally, then remove and shred the chicken thighs.
  7. Return the shredded chicken to the pot, stir, and garnish with parsley before serving.
