Ingredients

Vegetables

  • 3 large carrots
  • 4 spears celery
  • 1 unit onion
  • 4 cloves garlic
  • 1 tablespoon parsley

Broth and Protein

  • 3 cups chicken broth or bone broth
  • 3 units chicken thighs

Pasta and Liquid

  • 1 12-ounce package pasta of choice
  • 4 cups water

Fats and Seasonings

  • 3 tablespoons olive oil or butter
  • ½ teaspoon turmeric
  • 1 tablespoon sea salt
  • 1 teaspoon ground black pepper
  • 1 tablespoon dried oregano
  • 1 tablespoon dried dill
  • 1 teaspoon paprika

Instructions

  1. Prepare the vegetables by washing and chopping the carrots, celery, and onion.
  2. Turn on the Instant Pot to the 'sauté' setting and add the oil or butter.
  3. Add the chopped onions, carrots, celery, garlic, and sea salt, cooking for about 5 minutes.
  4. Add the chicken thighs, chicken broth, water, pasta, and all spices, stirring to combine.
  5. Set the Instant Pot to the 'soup' function and cook for about 8 minutes.
  6. Allow the pressure to release naturally, then remove the chicken thighs and shred them.
  7. Return the shredded chicken to the pot, garnish with parsley, and serve.
  8. For stovetop method, follow the same steps but simmer for 45 minutes after boiling, adding pasta at the 35-minute mark.
