Ingredients

The crust

  • 4 cups all purpose flour
  • 2 Tablespoons sugar
  • ½ Tablespoon salt
  • ½ - 2 teaspoons turmeric
  • 5 ounces shortening
  • 1 Tablespoon vinegar (optional)
  • 1 cup iced water
  • 5 ounces butter

The filling

  • ½ medium onion (chopped)
  • 1 teaspoon granulated garlic
  • 1 teaspoon paprika
  • ½ teaspoon all spice powder
  • 1 teaspoon curry
  • 1 teaspoon dried thyme
  • 1 teaspoon white pepper
  • 3 green onions (chopped)
  • 2 Tablespoons chopped parsley
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon chili pepper
  • 1 pound ground chicken
  • ¼ cup breadcrumbs
  • ½ scotch bonnet pepper (chopped, optional)
  • ½ teaspoon chicken bouillon powder (optional)

Instructions

  1. Mix flour, salt, sugar, and turmeric in a food processor or by hand.
  2. Add butter and shortening, then vinegar and water gradually until the dough holds together.
  3. Roll out the dough on a floured surface, cut into circles, and refrigerate for 30 minutes.
  4. In a saucepan, heat oil and sauté onions, garlic, paprika, thyme, curry, chili powder, white pepper, and chicken bouillon for 2 minutes.
  5. Add ground chicken and breadcrumbs, cooking for about 10 minutes while stirring frequently.
  6. Stir in green onions and parsley, then adjust seasoning and let cool.
  7. Scoop filling onto each dough circle, brush edges with egg white, fold, and seal.
  8. Preheat oven to 375°F, place patties on a baking sheet, and bake for 25-30 minutes until golden brown.
