Ingredients

The Sausage Gravy

  • 1 bunch green onions
  • 1 tablespoon avocado oil or olive oil
  • 8 oz sliced button mushrooms
  • 1 lb bulk pork sausage
  • ½ cup all-purpose flour
  • 2 cups low-sodium chicken broth
  • 2 cups milk of choice
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 1 teaspoon ground sage
  • ½ teaspoon salt

The Biscuits

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • ¼ teaspoon salt
  • 6 tablespoons cold unsalted butter
  • 1 cup milk of choice
  • 1 teaspoon apple cider vinegar or white wine vinegar
  • to taste flaky sea salt

Instructions

  1. Preheat the oven to 400℉ and prepare a baking dish with nonstick spray.
  2. Slice the green onions, separating the white/light green parts from the dark green parts.
  3. In a skillet, heat oil and sauté mushrooms, sausage, and the white/light green parts of the green onions for 7-10 minutes.
  4. In a bowl, mix flour, baking powder, ¾ cup cheese, garlic powder, and salt; stir in the reserved dark green onions.
  5. Cut cold butter into the dry ingredients until crumbly, then add milk and vinegar to form a soft dough.
  6. Once the sausage is browned, sprinkle flour over it and mix well.
  7. Gradually add chicken broth and then milk, stirring until thickened.
  8. Pour the gravy into the baking dish and top with mounds of biscuit dough.
  9. Bake for 15 minutes, then add remaining cheese and flaky salt, and bake for an additional 12-15 minutes.
  10. Let cool for 10 minutes before serving.
