Durian Mooncake

Ingredients

The filling

  • 300 g durian pulp
  • 11 g gelatin
  • 2 tablespoons water

The dough

  • 125 g snow skin flour
  • 30 g gao fen
  • 130 g water or carrot juice
  • 25 g shortening
  • 25 g icing sugar
  • 1-2 drops coloring
  • 1 tablespoon gao fen for dusting

Instructions

  1. Dissolve the gelatin in water and microwave until melted, then mix with durian pulp.
  2. Scoop and roll the durian filling into balls, wrap in plastic, and refrigerate.
  3. Combine snow skin flour and gao fen in a bowl.
  4. In a pot, mix water or carrot juice with shortening and icing sugar, bring to a boil.
  5. Add the hot mixture to the flour mixture and stir until smooth dough forms, then knead in coloring.
  6. Divide the dough into balls, wrap each around a durian filling ball.
  7. Dust a mooncake mold with gao fen, press the mooncake into the mold, and release.
  8. Store the mooncakes in an airtight container and chill before serving.
