Instructions
- Dissolve the gelatin in water and microwave until melted, then mix with durian pulp.
- Scoop and roll the durian filling into balls, wrap in plastic, and refrigerate.
- Combine snow skin flour and gao fen in a bowl.
- In a pot, mix water or carrot juice with shortening and icing sugar, bring to a boil.
- Add the hot mixture to the flour mixture and stir until smooth dough forms, then knead in coloring.
- Divide the dough into balls, wrap each around a durian filling ball.
- Dust a mooncake mold with gao fen, press the mooncake into the mold, and release.
- Store the mooncakes in an airtight container and chill before serving.
