Ingredients

The chicken and marinade

  • 1 small (150g) skinless chicken breast
  • ¼ cup buttermilk
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ½ tsp sambal oelek
  • 1 tsp honey
  • 1 tbsp lemon juice
  • ½ tsp Dijon mustard

The breading

  • shredded wheat biscuit shredded wheat biscuit
  • 1 tbsp white sesame seeds
  • 1 tbsp black sesame seeds
  • 1 tbsp wheat germ
  • 2 tbsp spelt flour
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ tsp paprika

Honey Mustard Sauce

  • 1 tbsp liquid honey
  • 1 tbsp Dijon mustard
  • 2 tbsp 0% Fat Plain Greek Yogurt

Instructions

  1. Mix all marinade ingredients in a container and add chicken pieces. Cover and refrigerate overnight.
  2. In a food processor, combine breading ingredients and grind until even. Transfer to a shallow dish.
  3. Remove chicken from marinade and coat in breading. Dip in marinade again and repeat the breading process.
  4. Heat olive oil in a pan over medium-high heat. Cook chicken pieces for about 10 minutes, flipping until golden brown.
  5. While chicken cooks, whisk together sauce ingredients in a bowl until smooth.
  6. Serve chicken immediately with fresh crudités.
