Skillet Chicken with Grapes and Caramelized Onions

Ingredients

The Caramelized Onions

  • 2 tablespoons butter
  • 1 medium yellow onion, thinly sliced

The Chicken

  • ½ cup flour
  • ½ teaspoon salt
  • ½ teaspoon chili powder
  • ¼ teaspoon thyme
  • ¼ teaspoon allspice
  • 2 lbs chicken thighs with skin (4-5)
  • 2 tablespoons oil
  • ¾ cup dry red wine
  • ½ cup chicken broth
  • 2 cups red California grapes
  • to taste parsley for topping

Instructions

  1. 1. Caramelize the onions by heating butter in a skillet over medium-low heat, adding sliced onions, and cooking until deep golden, about 20 minutes.
  2. 2. Preheat the oven to 400°F.
  3. 3. Combine flour, salt, chili powder, thyme, allspice, and black pepper in a bowl. Dredge chicken in the mixture, shaking off excess.
  4. 4. In the same skillet, heat oil over medium-high heat, add chicken skin-side down, and fry until golden brown, then flip and cook briefly.
  5. 5. Remove chicken and lower the heat. Add wine to the skillet and simmer until slightly thickened, then add chicken and onions back to the pan.
  6. 6. Bake in the oven for 20 minutes.
  7. 7. Add grapes to the pan, baste with sauce, and bake for an additional 5-10 minutes.
  8. 8. Top with parsley and serve with salad, bread, quinoa, or rice.
