Skillet Chicken with Grapes and Caramelized Onions

Instructions
- 1. Caramelize the onions by heating butter in a skillet over medium-low heat, adding sliced onions, and cooking until deep golden, about 20 minutes.
- 2. Preheat the oven to 400°F.
- 3. Combine flour, salt, chili powder, thyme, allspice, and black pepper in a bowl. Dredge chicken in the mixture, shaking off excess.
- 4. In the same skillet, heat oil over medium-high heat, add chicken skin-side down, and fry until golden brown, then flip and cook briefly.
- 5. Remove chicken and lower the heat. Add wine to the skillet and simmer until slightly thickened, then add chicken and onions back to the pan.
- 6. Bake in the oven for 20 minutes.
- 7. Add grapes to the pan, baste with sauce, and bake for an additional 5-10 minutes.
- 8. Top with parsley and serve with salad, bread, quinoa, or rice.
