Sausage Stuffed Tomatoes

Instructions
- Preheat the oven to 400°F.
- Cut a 2-inch circle into the top of each tomato and scoop out the insides.
- Sprinkle the insides of the tomatoes with salt and drain upside down on paper towels.
- In a skillet, cook the sausage over medium-high heat, breaking it into chunks.
- Add diced onions to the skillet and cook until softened, then add minced garlic.
- Transfer the sausage mixture to a bowl and mix in breadcrumbs, parmesan, egg white, basil, salt, pepper, oregano, and parsley.
- Fill the hollowed tomatoes with the sausage mixture and place them in a baking dish.
- Bake for 20 minutes, then drizzle with balsamic glaze before serving.
