Sausage Stuffed Tomatoes

Ingredients

The filling

  • 1 lb uncooked Italian turkey or chicken sausage
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • cup panko breadcrumbs
  • cup grated parmesan cheese
  • 1 large egg white, beaten
  • 1 tablespoon chopped fresh basil
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon dried oregano
  • ¼ teaspoon dried parsley
  • 1 tablespoon balsamic glaze

The tomatoes

  • 6 large beefsteak tomatoes

Instructions

  1. Preheat the oven to 400°F.
  2. Cut a 2-inch circle into the top of each tomato and scoop out the insides.
  3. Sprinkle the insides of the tomatoes with salt and drain upside down on paper towels.
  4. In a skillet, cook the sausage over medium-high heat, breaking it into chunks.
  5. Add diced onions to the skillet and cook until softened, then add minced garlic.
  6. Transfer the sausage mixture to a bowl and mix in breadcrumbs, parmesan, egg white, basil, salt, pepper, oregano, and parsley.
  7. Fill the hollowed tomatoes with the sausage mixture and place them in a baking dish.
  8. Bake for 20 minutes, then drizzle with balsamic glaze before serving.
