Italian Sausage, Kale & Orzo Stuffed Tomatoes

Instructions
- 1. Heat a large skillet over medium-high heat and cook the Italian sausage until browned, crumbling it as it cooks. Remove the sausage from the pan.
- 2. In the same pan, add the onion and garlic, cooking for 5 minutes until the onion is translucent.
- 3. Add the kale and chicken broth, cover, and cook for an additional 5 minutes until the kale is wilted.
- 4. Reduce the heat to low and stir in the heavy cream and the cooked sausage.
- 5. Cook the orzo in boiling salted water according to package instructions, then add it to the sausage and kale mixture along with some reserved pasta water.
- 6. Spoon the mixture into the hollowed-out tomatoes and garnish with toasted pine nuts and Parmesan cheese.
