Tomato and Sausage Risotto

diced tomatoes in juice

hot Italian turkey sausage, casings removed

uncooked Arborio rice

dry white wine

fresh spinach, chopped

grated Parmesan cheese

light butter
Instructions
- Combine the diced tomatoes and water in a saucepan and simmer.
- In a large pot, cook the sausage and onion with salt and pepper until browned.
- Add the rice and stir, cooking for 1-2 minutes before adding the wine.
- Stir until the wine is absorbed, then add two cups of the tomato mixture.
- Lower the heat and simmer, stirring occasionally, until the liquid is absorbed.
- Continue adding the tomato mixture one cup at a time until fully absorbed.
- Once the rice is tender and creamy, stir in the chopped spinach until wilted.
- Remove from heat and mix in the butter and Parmesan cheese.
- Serve immediately.
