Tomato and Sausage Risotto

Ingredients

  • 1 can (28 oz) diced tomatoes in juice
  • 3 cups water
  • ¾ lb hot Italian turkey sausage, casings removed
  • 1 small onion, finely chopped
  • to taste salt & pepper
  • 1 cup uncooked Arborio rice
  • ½ cup dry white wine
  • 9 oz fresh spinach, chopped
  • ½ cup grated Parmesan cheese
  • 2 tablespoons light butter

Instructions

  1. Combine the diced tomatoes and water in a saucepan and simmer.
  2. In a large pot, cook the sausage and onion with salt and pepper until browned.
  3. Add the rice and stir, cooking for 1-2 minutes before adding the wine.
  4. Stir until the wine is absorbed, then add two cups of the tomato mixture.
  5. Lower the heat and simmer, stirring occasionally, until the liquid is absorbed.
  6. Continue adding the tomato mixture one cup at a time until fully absorbed.
  7. Once the rice is tender and creamy, stir in the chopped spinach until wilted.
  8. Remove from heat and mix in the butter and Parmesan cheese.
  9. Serve immediately.
