Instructions
- Heat oil in a large skillet over medium-high heat.
- Sauté the onion for 3-4 minutes until tender.
- Add the Italian sausage and cook until browned, breaking it into small pieces.
- Stir in garlic, Italian seasoning, oregano, salt, and black pepper.
- Transfer the mixture to a slow cooker.
- Add arborio rice and chicken stock, stirring to combine.
- Cook on high for 1½ to 2 hours or low for 3-4 hours.
- Stir in spinach and adjust seasoning if necessary.
- Serve garnished with parmesan and parsley.
