Ingredients

The base

  • 2 tablespoons olive oil
  • 1 medium yellow onion
  • 1 pound ground Italian sausage
  • 2 cloves garlic
  • 1 cup arborio rice
  • 4 cups unsalted chicken stock
  • 4 cups fresh spinach

Seasonings

  • 1 tablespoon Italian seasoning
  • 1 tablespoon dried oregano leaves
  • teaspoons coarse salt
  • ½ teaspoon ground black pepper

Garnish

  • to taste shaved parmesan
  • to taste chopped flat-leaf Italian parsley

Instructions

  1. Heat oil in a large skillet over medium-high heat.
  2. Sauté the onion for 3-4 minutes until tender.
  3. Add the Italian sausage and cook until browned, breaking it into small pieces.
  4. Stir in garlic, Italian seasoning, oregano, salt, and black pepper.
  5. Transfer the mixture to a slow cooker.
  6. Add arborio rice and chicken stock, stirring to combine.
  7. Cook on high for 1½ to 2 hours or low for 3-4 hours.
  8. Stir in spinach and adjust seasoning if necessary.
  9. Serve garnished with parmesan and parsley.
