Instructions
- 1. Boil water and cook rigatoni until just shy of al dente, then drain.
- 2. In a pan, sauté turkey sausage, onions, garlic, and peppers in olive oil until cooked through.
- 3. Add Italian seasoning, crushed red pepper, and fire roasted tomatoes; simmer and stir in baby spinach until wilted.
- 4. Remove from heat and combine the rigatoni with the sausage mixture and Parmesan cheese.
- 5. Cover and bake at 375°F for 45 minutes, then uncover and add mozzarella, parsley, and garlic cheese seasoning; bake for an additional 10 minutes.
