Turkey Sausage Rigatoni with Fire Roasted Tomato Sauce

Ingredients

The pasta

  • 12 ounces Rigatoni
  • 14.5 ounces Canned Fire Roasted Diced Tomatoes

The vegetables

  • 1 cup Red and Yellow Peppers, finely diced
  • ½ cup onion, finely diced
  • 2 cups Baby Spinach, chopped
  • 2 cloves garlic

The meat

  • pound Italian Turkey Sausage, ground, casing removed

The seasonings

  • 1 tsp Italian Seasoning, dried
  • ½ tsp Crushed Red Peppers
  • salt to taste
  • pepper to taste

The cheeses

  • cup Parmesan cheese, grated
  • ½ cup part skim mozzarella cheese

Garnish

  • Parsley, for garnishing (optional)
  • Dried Garlic Cheese Seasoning (optional)

Instructions

  1. 1. Boil water and cook rigatoni until just shy of al dente, then drain.
  2. 2. In a pan, sauté turkey sausage, onions, garlic, and peppers in olive oil until cooked through.
  3. 3. Add Italian seasoning, crushed red pepper, and fire roasted tomatoes; simmer and stir in baby spinach until wilted.
  4. 4. Remove from heat and combine the rigatoni with the sausage mixture and Parmesan cheese.
  5. 5. Cover and bake at 375°F for 45 minutes, then uncover and add mozzarella, parsley, and garlic cheese seasoning; bake for an additional 10 minutes.
