Ingredients

The casserole

  • 2½-3 pounds sweet potatoes
  • ½ cup brown sweetener
  • 2 large eggs
  • 1 teaspoon vanilla
  • 4 tablespoons unsalted butter
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon salt

Pecan Streusel Topping

  • ¼ cup sweetener or sugar
  • ¼ cup flour
  • tablespoons unsalted butter
  • 1 cup chopped pecans

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Grease a 9x13 baking dish.
  3. Combine the mashed sweet potatoes, eggs, melted butter, vanilla, brown sweetener, cinnamon, nutmeg, and salt in a mixing bowl.
  4. Blend the ingredients using a hand mixer until smooth.
  5. Pour the sweet potato mixture into the prepared baking dish.
  6. In another bowl, combine the pecans, flour, melted butter, and sweetener or sugar, and stir until mixed.
  7. Spread the pecan mixture evenly over the sweet potato layer.
  8. Bake for 20-25 minutes or until the topping is browned.
  9. Allow to cool before serving.
