Sweet Potato Casserole with Pecans

Instructions
- Preheat the oven to 350°F and prepare a baking sheet with foil and cooking spray.
- Prick the sweet potatoes with a fork and bake them on the sheet until tender, about 45 minutes to 1 hour.
- Once cool, scoop out the insides of the sweet potatoes into a large bowl.
- Mix in melted butter, milk, brown sugar, maple syrup, cinnamon, egg, and vanilla until smooth.
- In another bowl, combine brown sugar, flour, melted butter, and pecans to create the streusel topping.
- Spread the sweet potato mixture in a greased baking dish and top with the streusel.
- Bake for 30 minutes until the topping is lightly browned, then let sit for 10 minutes before serving.
