Sweet Potato Casserole with Pecans

Ingredients

The sweet potato layer

  • 2 lbs sweet potatoes
  • 3 tablespoons butter
  • ¼ cup milk
  • ¼ cup brown sugar
  • 2 tablespoons maple syrup
  • 1 teaspoon cinnamon
  • 1 large egg
  • ½ teaspoon vanilla extract
  • as needed spray cooking spray

The streusel topping

  • ¾ cup brown sugar
  • ½ cup flour
  • 5 tablespoons butter
  • ¾ cup chopped pecans

Instructions

  1. Preheat the oven to 350°F and prepare a baking sheet with foil and cooking spray.
  2. Prick the sweet potatoes with a fork and bake them on the sheet until tender, about 45 minutes to 1 hour.
  3. Once cool, scoop out the insides of the sweet potatoes into a large bowl.
  4. Mix in melted butter, milk, brown sugar, maple syrup, cinnamon, egg, and vanilla until smooth.
  5. In another bowl, combine brown sugar, flour, melted butter, and pecans to create the streusel topping.
  6. Spread the sweet potato mixture in a greased baking dish and top with the streusel.
  7. Bake for 30 minutes until the topping is lightly browned, then let sit for 10 minutes before serving.
