Ingredients

The casserole

  • 2 medium sweet potatoes
  • 3 tablespoons butter (preferably unsalted)
  • 2 teaspoons pure vanilla extract
  • cup milk
  • 1 large egg
  • 1 tablespoon pure maple syrup

The topping

  • 1 cup pecans (chopped)
  • cup whole-wheat flour
  • 4 tablespoons butter (preferably unsalted)
  • 1 tablespoon pure maple syrup

Instructions

  1. Preheat the oven to 350°F.
  2. Peel, cube, and boil the sweet potatoes until tender, about 10 minutes.
  3. Drain the potatoes and add butter, vanilla, milk, egg, and syrup; mash or mix until smooth.
  4. Transfer the mashed sweet potato mixture to a square casserole dish.
  5. For the topping, mix together pecans and flour, then melt butter and syrup together and stir into the mixture.
  6. Spread the pecan topping evenly over the sweet potato mixture.
  7. Bake for 20 to 25 minutes or until bubbly.
