Ingredients

Filling

  • 4 large sweet potatoes
  • 1 tbsp pure maple syrup
  • 1 tbsp butter
  • ½ cup milk
  • 1 tsp vanilla
  • ½ tsp cinnamon
  • ½ tsp salt

Crumble Topping

  • ½ cup rolled oats
  • cup white whole wheat flour
  • ¼ cup brown sugar
  • ½ cup walnuts
  • ½ tsp cinnamon
  • ¼ tsp salt
  • ¼ cup butter

Instructions

  1. 1. Preheat the oven to 350°F.
  2. 2. Boil sweet potatoes in a large pot of water until fork tender, about 10-15 minutes.
  3. 3. Drain the sweet potatoes and combine with maple syrup, butter, milk, vanilla, cinnamon, and salt. Mash until smooth.
  4. 4. In a separate bowl, mix rolled oats, flour, brown sugar, walnuts, cinnamon, salt, and butter to create a crumbly topping.
  5. 5. Spread the sweet potato mixture in a casserole dish and top with the crumble mixture.
  6. 6. Bake for 30-40 minutes until the topping is golden brown.
