Ingredients

Sweet Potato Base

  • 3 lbs sweet potatoes
  • 1 large egg
  • ¼ cup maple syrup
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • ½ tsp salt

Crumble Topping

  • ¾ cup rolled oats
  • ¾ cup pecans, chopped very small
  • ½ cup oat flour
  • 1 tsp cinnamon
  • ¼ tsp salt
  • 3 tbsp butter, melted
  • ¼ cup maple syrup

Instructions

  1. Bake sweet potatoes at 425°F with holes poked in them for 30 minutes, then flip and bake for another 15-30 minutes until soft.
  2. Cut open the baked sweet potatoes and let them cool completely.
  3. While the sweet potatoes cool, mix the oats, pecans, oat flour, cinnamon, and salt in a bowl.
  4. Add melted butter and maple syrup to the oat mixture and combine well.
  5. Once the sweet potatoes have cooled, peel off the skin and place the flesh in a food processor.
  6. Add the egg, maple syrup, vanilla, cinnamon, and salt to the sweet potato flesh and blend until smooth.
  7. Pour the sweet potato mixture into a 3-quart baking dish.
  8. Sprinkle the crumble topping over the sweet potato mixture until evenly covered.
  9. Bake at 350°F for 45-50 minutes, or until the topping is golden brown.
