Healthier Sweet Potato Casserole

Instructions
- Bake sweet potatoes at 425°F with holes poked in them for 30 minutes, then flip and bake for another 15-30 minutes until soft.
- Cut open the baked sweet potatoes and let them cool completely.
- While the sweet potatoes cool, mix the oats, pecans, oat flour, cinnamon, and salt in a bowl.
- Add melted butter and maple syrup to the oat mixture and combine well.
- Once the sweet potatoes have cooled, peel off the skin and place the flesh in a food processor.
- Add the egg, maple syrup, vanilla, cinnamon, and salt to the sweet potato flesh and blend until smooth.
- Pour the sweet potato mixture into a 3-quart baking dish.
- Sprinkle the crumble topping over the sweet potato mixture until evenly covered.
- Bake at 350°F for 45-50 minutes, or until the topping is golden brown.
