Healthy Sweet Potato Casserole

Instructions
- Preheat the oven to 375ºF and grease a baking dish.
- Bake the sweet potatoes until soft, about 40-50 minutes.
- Mix the topping ingredients (excluding bacon) in a small bowl.
- Remove the sweet potatoes from the oven and let them cool for 5 minutes before peeling.
- Mash the sweet potatoes and mix in the remaining filling ingredients except the eggs until smooth, then add the eggs and mix again.
- Spread the sweet potato filling in the prepared baking dish and top with the pecan mixture.
- Cover with foil and bake for 30 minutes, then uncover, add bacon, and bake for an additional 10-15 minutes.
