Ingredients

Sweet Potato Filling

  • 2½–2¾ lbs. sweet potatoes
  • ¼ cup maple syrup
  • cup dairy or non-dairy milk
  • tablespoons butter
  • 1 teaspoon sea salt
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon chili powder
  • 2 whole eggs

Topping

  • 1 cup pecans
  • 3 strips bacon
  • 1 tablespoon butter
  • ½ teaspoon ground cinnamon
  • pinch nutmeg
  • pinch salt

Instructions

  1. Preheat the oven to 375ºF and grease a baking dish.
  2. Bake the sweet potatoes until soft, about 40-50 minutes.
  3. Mix the topping ingredients (excluding bacon) in a small bowl.
  4. Remove the sweet potatoes from the oven and let them cool for 5 minutes before peeling.
  5. Mash the sweet potatoes and mix in the remaining filling ingredients except the eggs until smooth, then add the eggs and mix again.
  6. Spread the sweet potato filling in the prepared baking dish and top with the pecan mixture.
  7. Cover with foil and bake for 30 minutes, then uncover, add bacon, and bake for an additional 10-15 minutes.
